The Bikini Cocktail

Serves 10 servings

To make the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (yields 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Directions

To prepare the Syrup: Place all the items into a pot, heat until it reaches a light boil, agitating so the sugar melts. After that, take off the stove allowing it to cool entirely. Decant into a sterilised bottle, seal and refrigerate it chilled, it will last for about a month.

Preparing the Batch Mix: Pour every spirits and syrup into one large bottle, let it rest for 60 minutes, then filter it , ideally through cheesecloth, so it's fully clarified.

For serving: Pour 85ml from the premix into your mixing glass filled with ice, and stir gently for about 60 seconds to chill. Filter into an frosted cocktail glass or similar, decorate with a few cranberries and complete it by giving it a quick spritz of the essential oil above the glass.
